Easy Ice Cream Cake
You can easily make an ice cream cake using your favorite ice cream and any boxed cake mix. With this method, you do not have to let your ice cream melt to spread it between cake layers then wait hours for it to refreeze. Bake the Cake:
Make your cake according to your box mix. You can make as many layers as you want. Just be sure to use the same size pan for each layer. When the cakes are baked, put them aside and let them cool.
Mold the Ice Cream:
Take your ice cream out of the freezer and let it sit at room temperature just long enough so you can easily scoop it out. While waiting for the ice cream to soften, line your cake pan with wax paper or plastic wrap. You will be using the cake pan as an ice cream mold and by lining it, you will be able to release the ice cream easily from the pan.
When your ice cream is soft enough to scoop, start filling the cake pan with ice cream. As you put ice cream in the cake pan, flatten it out so the entire bottom of the pan is covered with ice cream. If you have a duplicate cake pan, or even a smaller cake pan in the same shape, you can use it as a press to flatten the ice cream. Keep adding ice cream to the cake pan until you have the thickness of ice cream that you want.
Build the Ice Cream Cake:
Place one layer of cake on your cake platter. Then flip the molded ice cream on top of one of your layers of cake. The ice cream will fit perfectly because you used the same size and shape cake pan for both the cake and the ice cream.
Make as many layers as you want for your ice cream cake. Then pop it in the freezer for a bit to let it set. Then you can decorate it any way you want using your favorite frosting. Then keep it stored in the freezer. You may want to take the ice cream cake out of the freezer and let it sit at room temperature for about 10 minutes before cutting into it.
Substitute the Cake:
If you are not up to baking a cake, or it’s too hot to bake, or you need a cake right away, you can always make an ice cream cake using a ready made cake. You can buy several pound cakes and slice them. Then put the slices side by side on a cutting board or your cake platter, making sure the finished size is slightly larger than the cake pan you’ll be using as an ice cream mold. Then after you plop the ice cream on top of the slices of cake, you can add another layer of cakes and trim the edges so the entire cake is even.
If you want to try something super delicious, make your cake out of things like Twinkies, Suzy-Q’s, Devil Dogs, Zingers or whatever sweet cakes you want. You can also add candy, coconut, chocolate chips, caramel, or whatever you want between the layers or you can mix these items into the ice cream as you mold it.
