Quick Mexican Menu Ideas

Mexican Tacos / Quesadillas / Guacamole

Mexico’s authentic, rich food flavours make dining at local restaurants in Mexico’s towns a fun and delicious experience. The simplicity of method with genuine ingredients produces delicacies for anyone’s palette. Mexico’s fabulous food is a large portion of the rest and relaxation that comes with their southern sunny days.

Mexican Tacos 

Ingredients:

1 pkg. small corn tortillas

6 oz. leftover steak

2 ripe avocados sliced

1 Italian plum tomato

¼ cup chopped Cilantro leaves  

1 lime

cup finely chopped onion

½ tsp salt

½ Jalapeno pepper cut finely (optional)

½ cup sour cream or fresh cheese

Mexican hot sauce (optional)

Method:

Warm tortillas in the oven or microwave. Cube or thinly slice steak (against the grain) and warm in a frying pan. Slice avocados and sprinkle with juice of one half of the lime. Set aside. Chop tomato into small cubes in a bowl. Add chopped cilantro, salt, and onion to the tomatoes. Mix in the rest of limejuice. Add a portion of the steak, avocado slices, and a spoonful of mixture in each tortilla. Top with your choice of a dollop of sour cream or fresh cheese. Add a few drops of Mexican hot sauce (if desired) and, Olé!

Mexican Quesadillas

Ingredients:

1 pkg. tortillas  (2 tortillas for each quesadilla)

1 cup shredded cheese

1 pkg. small shrimp (if uncooked, cook until pink)

1 tsp. chopped cilantro

1 tbs. finely chopped Spanish onion

Chopped Jalapeno as to your taste

Pinch of salt

Method:

Lay the first tortilla flat. Arrange shrimp and top with a portion of the cheese. Add onion, cilantro, and jalapeno if desired. Sprinkle with a pinch of salt. Lay the second tortilla on top. Microwave for 30+ seconds or bake in hot oven (350 F) for 3-5 min.

Guacamole & Corn Chips

Ingredients:

3 ripe avocados

cup cilantro leaves chopped

½ tsp salt

2 limes

½ cup Spanish onion chopped finely

½ Jalapeno pepper cut finely (more or less as desired)

2 Italian plum tomatoes

1 large bag of corn chips

Method: 

Prepare the avocados by removing peel and pit. Mash the pulp in a medium sized bowl with cilantro and lime juice. Add onion and jalapeno pepper. Fold in tomatoes being careful not to mush them. Be creative and free to change up the amounts of each ingredient. Dip with corn chips.

Food for thought – Mexico’s food is delicious and fun and is fantastic for party menus. The recipes can be adapted to anyone’s preferences for hot and spicy or not so hot. Enjoy!
